Mashed Potatoes with Kale & Fried Shallots

For the sake of Eat Local Week we swapped out the olive oil in the recipe below for local butter. If you’ve got kids who might not be keen on flecks of kale in their mashed potatoes, then it’s pretty easy to serve them up a scoop before you incorporate the greens. But it’s your duty as a parent to introduce them to the pleasures of fried shallots.
