Tomato Poached Eggs

If you haven’t eaten eggs this way, oh boy, are you in for a treat. This recipe calls for a 28 oz. can of diced tomatoes (which works beautifully in a pinch), but when local tomatoes are in season, it's just a shame not to use them. This is my favorite breakfast. It's great for company – beautiful presentation on the table and it's perfect for a party of four. But it also works for any meal of the day. – Ben Partridge
